The buckwheat crêpe: the Galette

The "Wholemeal" – La complete !

For one galette:

  • 1 slice of cooked ham (or roasted turkey)
  • 1 cup grated cheese
  • 1 small yellow onion
  • 1 egg
  • salt and pepper

Cut the ham in little strips. Peel the onion and mince it. Fry it in a mixture of butter and cooking oil. Keep stirring until the onion bits are golden and tender.

If you make your galette on a griddle, cook it on one side. While it is cooking, put a little butter on the middle of the uncooked side and break the whole egg onto the uncooked side. Season according to your taste with salt and pepper.

On top of the egg white, add the grated cheese, ham and the warm onion puree. Let it cook for a little while. Fold the four sides of the galette so that only the egg yolk can be seen. In any case serve it, as soon as the egg is cooked. So that the galette is both tender and crisp, when folded, take a bit of melted butter and spread it on the galette with a flat pastry brush.

When you make your galettes in advance or if you buy them, you can prepare a quick and good complete galette.

 

Coat the center of the cold galette with cheese and ham (or any cooked foodstuff you like). Fold it completely into a square so that all the fixings remain in the galette "envelope". You can add a little butter on the folded galette. Put it on an appropriate plastic container and reheat it for 20 seconds in the microwave before eating it.

If you want to eat it cold, after folding, put it 15 seconds in the microwave to melt the cheese. At home, you can also reheat it in a buttered pan over moderate heat for 2 minutes on each side and add a cooked egg on it when serving.
